Occupying an 8,000 sq ft space at the Marina Bay Sands is celebrity chef Wakuda Tetsuya’s acclaimed Japanese restaurant – Waku Ghin.
There’s no a la carte menu here, only a 10-course degustation menu that takes your palate on a rollercoaster ride due to the complexity of flavours. The first eight courses are all about the best seafood and meat; one of the highlights being the signature Marinated Botan Shrimp with Sea Urchin and Oscietra Caviar, served as a second course. Fresh and smooth, this serves as a preview of the upcoming sensational dishes to come. The last two courses are reserved for desserts, which you can enjoy at the main dining area overlooking the Marina Bay landscape.

Shinji by Kanesaka
Shinji by Kanesaka is one of the restaurants that always appears on the list of the Asia’s best restaurants. It’s not surprising as this place is by none other than Chef Shinji Kanesaka. He dedicated most of his life in the art of sushi making and was rewarded by earning 2 Michelin stars for his exclusive restaurant in Tokyo.
His motto is simple: “ I want to make sushi that I want to eat.” This belief is translated to the sushi sets and omakase meals that are served at his Singapore restaurant. Dubbed as the best sushi restaurant (outside Japan), these creations are prepared fresh before your very eyes and only use premium ingredients.

The restaurant’s outlet at Mandarin Gallery in Singapore is the family’s first business venture outside Japan. To ensure that it replicates the dining experience in Tokyo, Chef Kenjiro ‘Hatch’ Hashida, the guru’s son, helms the kitchen.
Staying true to his family tradition, the restaurant offers a dining experience that highlights Japan’s seasonal produce. As such, the menu of fresh seafood and other Japanese favourites vary based on the seasons. But one thing is for sure – the high standards of the food remain.

Sushi Mitsuya claims its success from the capable hands of Chef Ryosuke Harada. Having worked for acclaimed Japanese restaurants in Tokyo and Hong Kong, he ensures a personal dining experience that highlights the best of Japanese cuisine.
At the restaurant, there is only an omakase menu that starts with a trio of appetisers. Prepared based on the seasonality of ingredients, it consists of various sashimi, sushi and Harada style creations. His innovative dishes are usually prepared by ageing fish (instead of serving it raw); a traditional Japanese technique that is truly unique to this restaurant.
Dining at Mikuni is like going on a food trip to Japan because of the extensive selection of Japanese dishes. As such, the restaurant is divided into three sections: the sushi counter where you can find a wide array of raw fish, as well as the teppanyaki and robatayaki counters where fresh ingredients are laid and ready to be cooked upon request.
Leading the team of culinary chefs is Executive Chef Moon Kyung Soo, Korean by birth but lives and breathes Japan. With his Japanese cooking techniques mixed with his personal flair, he elevates these ingredients to come up with dishes that can rival any authentic restaurant in Japan.
