Fancy a gastronomic journey through the regions of Burgos and Cantabria in Spain? Well, the team at La Ventana has invited guest chef Miguel Cobo of one Michelin-starred Cobo Vintage in Burgos to craft a 10-course dinner menu featuring his signature dishes paired with Spanish tipples.

Tangy corn nuts biscuit begin the meal, followed by French oysters with a zesty apple soup studded with bits of cucumber and celery sauce. Other savouries include a dish of glazed pork enhanced by salted and creamy yolk of tubers, and roasted monkfish with black olives. The dessert of Thai panna cotta with coconut ice cream and yuzu gel, however, showcases his flair for fusing different cuisines.
